I assume you have the motor trimmed all the way down until it rolls over? One solution is to put one of those ugly fins on the ventilation plate, that will keep the nose down without hurting top end at all. But they are ugly as sin… When you slow down to come off plane, if you tuck the motor in, does it porpoise badly? If so you might need more weight forward, or if it has a non-factory jack plate it might be too much (12″ for example) as that moves the C/G back quite a bit and gives the motor fits trying to lift the rear up to get the bow down.
