On my 99 jag it did the same and one summer I ad thermostats replaced and it still did it. Do you get an alarm? Is your motor a optimax? I know for a fact it will shut itself down before you totally burn it up. Someone here will help you more than I. Im not trying to still your thread, but I have a 05 200 hp EFI Mercury but when I stand on throttle to come out of hole I have a steady alarm as it peaks to fall over on plane. I replaced water pump impeller Friday cause it had been right at 3 years. Carried it out to day and the same problem. Now I can ease it over on plane and no problems. Idle I have 5 psi and 15 when on plane and just easing around 35-45 mph. I had gasket material in the hose from motor to output on cowling. What should I be looking at? New thermostats, poppet valve? Or could it be water in water fuel separator? Again not trying to jack a thread.
