The smartcraft system takes an average reading of the two thermostats (block temp), you would need a diagnostic computer to get individual readings. I agree with Phil, not cooling issues. Begin with routine maintenance, last time fuel filter was changed? Sparkplugs? Are they gapped correctly? Fuel lines ever been replaced/fuel bulb assembly hard and remain hard when engine is running? May be time to have fuel rail and injectors cleaned. To me it really sounds like you need to have the Pulse fuel pump rebuilt (this is cheap and easy to do yourself).
